Broke Baking: Cheddar and Dill Drop Biscuits

Sooooo I’m broke. I don’t think that’s much of a surprise to anyone though; I’m a student, I have failed so far at scoring a job, AND I really set myself up by including poor in my blog title. I spent this weekend away in Seattle with some pals so I spent the week leading up to it scrounging by/spending as little as possible. Still, a girls gotta eat right?  Luckily produce is cheap so I’ve been relying mostly on veggies, soups, and pancakes but sometimes you just gotta shake it up. So, you can imagine how excited I was when my wonderful roomie told me that she didn’t want her cheese and that it was up for grabs. I decided that I’d whip up some biscuits. They’re quick, required ingredients that I had and needed to use up, and who doesn’t love biscuits?!?!? Seriously, do you think people exist that don’t like biscuits? Cause that sucks for them.

Yaaaaaaaaaaaaaaaay biscuits!

Biscuits are super easy and quick to make. There’s only one part that really requires some attention but it’s not a big deal. When you add your butter to your flour you need to “cut” it in, which basically means your going to break up or cut your butter into little pieces and mix it into the flour. When cutting in butter you can use your fingers to rub it into the flour, a pastry cutter, a fork and knife, and so on and so forth. It’s important not to over mix though, you want the mixture to look grainy or mealy, not completely mixed. This will help make your biscuits flaky because there will be  different layers of fat once you fully mix your dough.

Once your butter is all nice and cut in, it’s smooth sailing! Add in your cheese and dill and give it a quick stir. I cut my cheese into relatively big cubes cause I like big pockets of cheese, but you could also grate it.

For wet ingredients I used milk and yogurt to make them extra moist and delicious. Mix till just they are combined; make sure not to over mix! Ps are you noticing how easy this all is??

Once mixed it’s time to bake! This made 12 good sized biscuits for me. I used a scoop but if you use two spoons you should be fine. Make sure to grease your baking pan before you drop your biscuits on.

Once you’ve got your biscuits panned, throw them in the oven for 15ish minutes, and wait with baited breath. Once they’re done, pull them out of the oven, maybe let them cool down (we didn’t), and ENJOY!!

Cheddar Dill Biscuits

  • 1 1/2 – 2 cups cheddar cheese, I cubed mine and I like a lot of cheese, feel free to adjust
  • 1 1/2 tbsp dried dill
  • 2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp sugar
  • 1/2 tsp salt
  • 5-6 tbsp cold butter, make sure it’s SUPER cold so it doesn’t melt into the dough
  • 3/4 cup plain yogurt, I used greek
  • 1/2 cup milk

Preheat your oven to 400ºF. In a large bowl combine flour, baking powder, baking soda, sugar, and salt. Cut butter into the mixture until it looks like “coarse meal” with whatever method your prefer. Stir in cheese and dill. In a separate bowl or measuring cup combine and stir together yogurt and milk. Slowly stir it into the flour mixture until just combined. Grease two baking sheets and divide dough into 12 pieces. Bake for 15-18 minutes or until cheese is fully melted and the biscuits are golden brown.
